FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used to obtain high-protein food concentrates and protein foods that have a functional purpose from marine aquatic organisms and food waste from their processing. Method of obtaining a protein-vitamin supplement is characterized by the fact that the caviar juice is frozen for 1.5–2 hours to a temperature of -35 °C, then subjected to vacuum freeze-drying, crushed and packaged.
EFFECT: invention makes it possible to rationally use the valuable raw materials of the fishing industry and to obtain a protein-vitamin supplement enriched with easily digestible protein, essential vitamins and minerals.
