FIELD: food industry.

SUBSTANCE: invention relates to food industry. According to the proposed method whole apples are treated with UHF electromagnetic field with a frequency equal to 2400±50 MHz, power equal to 300 - 600 W during 2.0 - 2.5 minutes and are cut into slices. Wastes produced in the cutting process are poured with water and boiled during 10-20 minutes; then the produced mass is cooled to 50 - 60°C and filtered to produce an infusion with dry substances content equal to 3 -6%. Then added to the infusion is sugar in such a quantity that to produce a sugar syrup with dry substances content equal to 26-30%.

EFFECT: method ensures creation of a non-waste technology for apple compote production.
