FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to compote production. The method envisages preparation of a sugar syrup for pouring quince compote based on an infusion of fruit wastes remaining after quince cutting into slices, the infusion dry substances content equal to 6-8%, and sugar sand with dry substances content equal to 99.5%.
EFFECT: invention allows to reduce sugar expenditure and ensure a non-waste technology of quince compote production.
