FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular - to vacuum evaporator apparatus and may be used for production of pureed fruit and vegetable concentrates. The cascade vacuum evaporator apparatus contains a vacuum chamber, a charging and a discharging devices. Positioned inside the rectangular cross section vacuum chamber are heat exchanger plates, his inclination angle of each of them adjusted by means of an independent drive. Installed inside the first heat exchanger plate body is a device for the input product supply equipped with a stirrer. The heat exchanger plates are hollow, with transversal partitions positioned inside them, and are equipped with nipples for delivery and withdrawal of hot and spent heat medium accordingly. Passing over each plate is an inclined chain conveyor with axles with combined scrapers positioned on its chain links. Positioned behind the last plate is a cleaning device. Positioned in the vacuum chamber cover are nipples for withdrawal of water vapour generated, connected to the vacuum pump via a manifold. There are separators contained in the nipples positioned inside the vacuum chamber. Installed in the lower part of the vacuum chamber under the last plate is a discharge chamber with a vacuum sluice gate.
EFFECT: invention usage allows to enhance fruit and vegetable puree quality.
