FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages preparation of recipe components at the following expenditure ratio, weight parts: lagenaria - 1210; carrots - 66.9-68.62; bulb onions - 127.5-129.13; greens - 4.4; wheat flour - 9.1; pumpkin seeds extraction cake - 24.2; vegetable oil - 63; tomato paste in conversion to 30% dry substances content - 71.2; sweet pepper puree in conversion to 7% dry substances content - 39.3; ascorbic acid - 1.03; black hot pepper - 0.505; allspice - 0.505; water till the target product yield is equal to 1000. One performs lagenaria cutting, soft cooking with acute steam, milling and concentration under vacuum till dry substances content is equal to 9-10%. Carrots and bulb onions are cut, fried in vegetable oil and milled. Greens are milled. Wheat flour is sauteed. Ground pumpkin seeds extraction cake is poured with drinking water and maintained for swelling. One performs mixing of the listed components (while heated) with tomato paste, sweet pepper puree, salt, ascorbic acid, black hot pepper and allspice. One proceeds with packing, sealing and sterilisation.
EFFECT: technology allows to produce new appetiser preserves with low adhesion to container walls.
