FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages recipe components preparation, lagenaria cutting, soft cooking with acute steam, milling and concentration under vacuum till dry substances content is equal to 9-10%, carrots and bulb onions cutting, frying in vegetable oil and milling, sweet pepper frying in vegetable oil and milling, greens milling, wheat flour sauteing, ground pumpkin seeds extraction cake pouring with drinking water and maintenance for swelling. One mixes the listed components (while heated) with tomato paste, salt, ascorbic acid, black hot pepper and allspice; then one proceeds with packing, sealing and sterilisation.
EFFECT: invention ensures low adhesion of the product to container walls.
