SUBSTANCE: one performs azodiisobutyronitrile-induced chemiluminescence addition of to 10 ml of kumiss 1 ml 1·10-1 M solution of azodiisobutyronitrile, measurement of light sums of luminescence and maximal of luminosity product is implemented by chemiluminescent analysis on "Hemilyuminomere "ХЛ-003" during 5 minutes, at a temperature of 20°C, values of acidity of kumiss from 80 to 110°T. One determines light sum and maximum luminosity chemiluminescence, at values of light sums of luminescence within 0.86-1.0 c.u. or 1.91-2.43 c.u. and maximal of luminosity within 0.52-0.62 c.u. or 1.51-2.33 c.u. product is reviewed with preserved both quality and biological value.
EFFECT: invention usage enhances validity method due to determination intensity of reaction peroxidation lipids, biologically active substances in the composition of kumiss.
