FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology and food industry and represents a method of producing dextrose or fructose syrup, comprising a step of liquefying an aqueous suspension of granular starch with a variant of alpha-amylase, comprising substituting K17L + E185P SEQ ID NO: 1, to obtain a liquefied starch-containing material; saccharification of the liquefied starch-containing material from step a) in the presence of glucoamylase, pullulanase obtained from Bacillus deramificans, Bacillus subtilis, Bacillus amyloderamificans or Bacillus acidopullulyticus, to produce dextrose syrup, wherein the step further comprises adding a variant of alpha-amylase comprising substituting K176L + E185P SEQ ID NO: 1, and, optionally, c) isomerisation to produce fructose syrup; where step a) is carried out at pH 4–7.
EFFECT: invention allows to produce dextrose or fructose syrup with high degree of efficiency.
