FIELD: alcoholic industry.
SUBSTANCE: invention relates to a method for producing ethyl alcohol from grain. Method involves IR-treatment of grain at the radiant flow density E = 16-18 kWt/m2 for 40-50 s followed by grinding grain and preparing a batch. Enzyme-liquefiers are added to batch in the amount 0.5-1.0 U AS/1g of conventional starch and saccharifying enzymes are added in the amount 4.5-5.0 U GlA/1 g of conventional starch. Batch treatment is carried out at 56-58°C, pH = 5.0-5.5 for 3-4 days. Prepared saccharified must is fermented for 40-48 h and prepared mash is distilled off to prepare ethyl alcohol and post-alcohol distiller grains that is separated for solid and liquid phases. All volume of liquid phase is used for preparing a batch and solid phase is fed for preparing fodder product. Invention provides enhancing yield of ethyl alcohol based on additional saccharifying dextrins and deep biochemical alterations in grain at its IR-heating step resulting to the improved quality of fodder product.
