FIELD: food industry.
SUBSTANCE: method envisages grains husking, endosperm containing fraction mixing with water, 5% amber acid solution introduction in an amount of 0.1-0.5% of the water volume and the mixture dispersion to produce a batch. Then one performs the batch treatment and saccharifying action enzyme preparations introduction therein. The saccharified wort is cooled, fermented and the produced distiller's wort is distilled to produce ethyl alcohol.
EFFECT: invention allows to completely abolish application of enzyme preparations of diluent action and increase alcohol yield combined with high quality alcohol characteristics.
