FIELD: alcohol production. SUBSTANCE: grains are wetted with solution of enzyme preparations with cytolytic activity and maintained at 50-55 C for 2-4 h, after which dried to moisture content 14-15.5% and separated into two fractions: husk and endosperm. The second fraction is mixed with water and subjected to water-heat treatment and hydrolysis. Resulting must is fermented to form ripe mash, from which is isolated alcohol, and to distillery dregs husk-containing fraction is added.
