FIELD: food industry.
SUBSTANCE: invention relates to a food composition of pieces in gravy. The composition contains pieces in gravy with the index of the ratio of pieces to gravy being from nearly 25:75 to nearly 60:40; the gravy contains guar in an amount of nearly 0.01 - nearly 1% and deacetylated xanthan in an amount of nearly 0.01 - nearly 1%. The invention relates to a composition of gravy suitable for application in food compositions of pieces in gravy. The invention relates to a method for improvement of accessibility of food compositions of pieces in gravy. The invention relates to a method for improvement of the quality and consistence of excrements with animals consuming the said compositions. Guar and deacetylated xanthan application in preset quantities sustains viscosity required for uniform distribution of pieces in the food composition.
EFFECT: food compositions of pieces in gravy have an attractive appearance, the desirable taste attractiveness, have improved accessibility and beneficial effect on the excrements quality and consistence resulting from reduction of total gums content.
