FIELD: food industry.
SUBSTANCE: invention relates to food industry. The bananas treatment method involves ethylene-containing atmosphere impact on the said bananas. Then the said bananas are subjected to 1-methylcyclopropene-containing atmosphere impact. 1-methylcyclopropene concentration in such atmosphere is equal to at least 0.5 parts/bln. Then 1-methylcyclopropene concentration in ambient atmosphere is decreased to a level lower than 0.5 parts/bln. Then the said bananas are stored in package with modified atmosphere during at least 1 hour. The storage stage begins before expiry of 72 h after the 1-methylcyclopropene concentration decrease stage. The rate of carbon dioxide penetration into the package with modified atmosphere is equal to 2400 - 120000 cm3 per 1 kg of the said bananas a day.
EFFECT: invention allows to store bananas with the possibility of their ripening till a condition suitable for the consumer, increase their storage life and partly prevent appearance of such undesirable effects as the product density reduction and sugar spot appearance.
