FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method is proposed that provides different ripening periods for fruits and vegetables during transportation, according to which a controlled atmosphere is created inside the ripening space; temperature change from the temperature at which the ripened products are contained in a controlled atmosphere without ripening to the temperature at which the ripened products ripen in a controlled atmosphere; metered supply of the maturing agent to a controlled atmosphere; checking whether the rate of ripening increases or decreases, and determining the state of ripening by measuring the intensity of CO2 respiration. With an increase in the intensity of CO2 respiration, the maturation model is calibrated. When a given stage of maturation is reached, the temperature is changed to the transport temperature for the matured products and they are kept in a given state of ripening in a controlled atmosphere.
EFFECT: invention provides the necessary ripening of fruits and vegetables.
