FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for production of a high-quality biologically active food additive. A young Yakut horse fat concentrate is proposed. Raw material for the concentrate preparation is represented by visceral fat of young Yakut horses at an age from 6 months to 2.5 years which is at first frozen to a temperature equal to minus 16 - minus 22°C. Then fat is milled into particles sized no more than 2 mm with simultaneous defrosting to a temperature equal to minus 1-0°C. Then one performs thermal treatment at a temperature of 60°C during 30 minutes with subsequent fat separation from the water fraction. Then, at the end of the technological cycle, one adds an antioxidant represented by vitamin E in an amount of 0.1% of the fat weight.
EFFECT: invention allows to manufacture a product used for lipid metabolism correction as well as to expand the range of usage of animal origin raw materials in food industry.
