SUBSTANCE: invention relates to dairy industry and can be used for production of a dry milk product. Invention includes skimmed milk and milk whey procurement, milk whey separation for fat and casein powder extrication, milk whey pasterurisation and cooling, mixture components condensation, isomerisation of lactose into lactulose in concentrated milk whey and neutralisation with an organic acid solution, electrodialytic demineralisation of concentrated milk whey containing lactose which is partly isomerisated into lactulose, mixture composition, mixture drying.

EFFECT: invention ensures improvement of the finished product organoleptic characteristics and functional-technological properties.
