FIELD: food industry.
SUBSTANCE: invention relates to a method for manufacture of a milk product with addition of fruit puree. The method envisages preparation of a milk-and-fruit mixture of standardised pasteurised cow milk and fruit puree with pH equal to 4.0 - 4.6 and simultaneous thermal treatment by way of heating, mechanical treatment and structure-forming by way of continuous dispersion of the milk-and-fruit mixture till the mixture complete coagulation termination.
EFFECT: method ensures manufacture of a milk-and-fruit product with a puffy unstratifiable structure.
