FIELD: food industry.

SUBSTANCE: invention is related to sugar refining industry. The crystalline white sugar production method envisages first crystallisation fillmass boiling out in the first vacuum apparatus, removal of a part of fillmass and its supplying into the second vacuum apparatus, ready fillmasses release into the receptacle fillmass mixer, centrifugation in a filtering centrifuge with first runoff separation, sugar crystals washing with second runoff separation and crystalline white sugar discharge. The crystallisation centres are represented by seed fillmass with crystals sized 0.120-0.160 mm and growing till their content in fillmass is equal to 88.0-90.0% of dry substance. Then a part of fillmass from the said apparatus in an amount of 30-40% of the total weight is collected mixed with syrup and remelt syrup into the second vacuum apparatus as a crystalline base. In the first apparatus fillmass is boiled out to 92.0-92.5% of dry substance. In the second apparatus - to 93.0-93.5% of dry substance. Fillmass from the first vacuum apparatus is delivered for centrifugation 50-60 minutes earlier than from the second one. Sugar crystals washing is performed in two stages. At first, one performs sugar crystals washing with sugar-containing solution with concentration of 70-76% of dry substance and in an amount of 2.5-3.5% of fillmass weight at a temperature of 70-90°C. Then sugar crystals are treated with steam under a pressure of 0.3-0.4 MPa in an amount of 1.5-2.0% of fillmass weight.

EFFECT: invention ensures enhancement of sugar yield in the process of its boiling out and centrifugation combined with simultaneous quality improvement.
