FIELD: sugar production.

SUBSTANCE: invention relates to the production of sugar. A method for the production of sugar is proposed, which provides for the production of diffusion juice, purification, evaporation, filtration, boiling of the massecuite of the first crystallization in the first vacuum apparatus, the selection of a part of this massecuite and feeding it into the second vacuum apparatus, the descent of the finished massecuite into the receiving massecuite mixer and their centrifugation with separation the first stream, rinsing the crystals with the separation of the second stream and unloading the white sugar crystals from the centrifuge. Uterine massecuite is used as crystallization centers, which is preliminarily fractionated to the content of sugar crystals of 0.160-0.200 mm in size and then they are built up on pumping a mixture of syrup with clearing with a concentration of 65-75% of dry substances, maintaining the distance between the crystals in the range of 1.5×10-4-2.5×-4m with the introduction of filtered juice of II saturation for rocking the massecuite as needed to the content of 91.0-91.5% of dry substances in the massecuite. Then part of this massecuite is taken into the second vacuum apparatus mixed with syrup and melting, after which the massecuite is boiled in the first apparatus until cooked. The massecuite from the second vacuum apparatus is shaken by the first outflow from the first vacuum apparatus before centrifugation. Washing of sugar crystals is carried out with water saturated with ozone, at the rate of 5-8 mg/l. The washed crystalline white sugar is discharged from the centrifuge with a moisture content of 0.8-1.5%.

EFFECT: invention provides an increase in the yield of sugar in the process of its boiling and centrifugation, while improving its quality indicators.
