FIELD: food industry.

SUBSTANCE: invention relates to food industry. Method is proposed for obtaining a massecuite of the first crystallization, which involves thickening the mixture of syrup with gluing, planting crystals, their build-up, thickening of the massecuite until ready, centrifugation to obtain crystalline white sugar, as well as the first and second outflows. Crystal growing is carried out by controlling the supersaturation coefficient in the range 1.08–1.15 and 76–74 °C. Process of centrifugation is carried out in two stages – first by the second outflow of the massecuite of the first crystallization, diluted to 65–70 % of dry matter at the rate of 2.0–3.0 % to the weight of the massecuite, and then with wash water of 80–90 °C at a rate of 0.8–1.2 % of the weight of the massecuite.

EFFECT: method ensures a higher yield and quality of sugar, a reduction in the time of boiling and centrifugation of the massecuite, as well as saccharose losses in the crystallization compartment.
