FIELD: food industry.

SUBSTANCE: inventions group relates to dairy industry. The powdery composition is applicable for production of an acidified instant milk beverage having pH equal to 5.0 - 6.2 with usage of a pasteurised liquid milk product independent of its pasteurisation method and contains at least one monobasic food salt of polyprotonic acid with pKa less than 4.4 and, optionally, a sweetener, a thickener, a buffer salt, food fibre, a filling agent, an anti-clogging agent, a flavouring agent and a colouring agent with minimum stirring till obtainment of an acidified milk beverage. The composition is essentially free of traditional food acids. The other version of the composition involves addition of a pasteurised powdery milk product to the powdery composition to produce an acidified instant milk beverage. The beverage includes combination of the pasteurised milk product and the powdery composition.

EFFECT: inventions group ensures production of a beverage with good organoleptic properties, a smooth texture and without protein coagulation; the beverage is produced quickly and easily without intensive stirring with milk products, for instance, with a spoon unlike traditional compositions at the technology level which require intensive stirring with milk products.
