FIELD: food industry.
SUBSTANCE: method for protein-and-carbohydrate-and-vitamin products manufacture with soya usage involves preparation of a protein carbohydrate disperse system, protein substances coagulation in such system and the coagulate separation from whey. The disperse protein system is prepared by way of combined disintegration of soya seeds and green vegetative part of dill or parsley or celery or basil or thyme or majoram or estragon or sorrel or nettle or mint or leaves of spinage or horseradishes or currant or their combination with subsequent protein coagulation in the system with 5% ascorbic acid water solution. The coagulate is conditioned till moisture content is equal to 10-85%; whey is mixed with tomato paste at a weight ratio of 1:1 to produce protein-and-vitamin sauce.
EFFECT: invention allows to manufacture protein-and-carbohydrate-and-vitamin products having an antioxidant complex and high biological value; the process performance is higher.
