FIELD: agriculture.
SUBSTANCE: proposed method relates to biotechnology. Particularly, it relates to production of protein-carbohydrate hydrolyzates from shells to be used as raw stock for production of additives for food industry, pharmacology and cosmetology. In compliance with this process, shell hydrolyzate is neutralised by acetic acid to pH 7.0. Then, said hydrolyzate is fermented by addition of the culture of baker's yeast at the weight ratio of 1:5 at 36°C and continuous aeration for 24 hours.
EFFECT: expanded application range.
