FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology and can be used to produce biologically active additives and products for therapeutic purposes. Method involves preparation of raw materials, milling of molluscs, filtration, evaporation and freeze drying. Method includes hydrolysis of raw material from bivalve molluscs, using as raw material anadara, scallops or mussels, with further evaporation of the obtained hydrolysate under vacuum at from minus 800 to minus 900 mbar at temperature of 80 °C to content of dry dissolved substances in hydrolysate of not more than 15 %. After that, the obtained hydrolysate samples are frozen in the ice maker chamber of the freeze dryer at minus 60 °C for 3–4 hours in trays for lyophilization with layer of 4–8 mm, maintained at temperature not higher than minus 45 °C for 12 hours. Annealing is carried out at a temperature of minus 20 °C for 3 hours, then cooled again to minus 45 °C for 2 hours and ice is sublimated with heated shelf from minus 35 to 20 °C for 14–16 hours at vacuum of 1–5 Pa. Then, a desorption step is carried out at a shelf temperature of 30–40 °C and vacuum of 10–15 Pa for 6–10 hours to obtain a preparation with residual moisture content of not more than 10 %.

EFFECT: invention enables to obtain a lyophilisate of protein hydrolysates from bivalve molluscs and increase its storage life.
