FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to preparation of food, mainly, meat products by way of thermal treatment under a pressure. The press-mould consists of a cylindrical body, a detachable bottom, a spring-loaded movable platform and a closing device with a lock of bayonet design. The body has multiple-row projections with the possibility of the bottom displacement to various levels depending on the volume of the mass loaded.
EFFECT: closing device consists of a movable platform with dimensions corresponding to the inner diameter of the body; the platform is connected to the lock by a flexible or foldable bond in the form of a chain or a belt and a preliminarily compressed spring manufactured preferably from conventional alloys with a memory effect enhancing the spring force at a temperature of food products thermal treatment; during chilling the memory effect decreases the force to the limits facilitating the closing device installation and detachment.
