FIELD: food industry.
SUBSTANCE: invention relates to food industry. The freshly cut lemons preservation method involves at least the following stages: one adds water for filling into a container containing freshly cut lemons portions; the said liquid contains lemon juice, lime juice, ascorbic acid, citric acid, salt and sodium metabisulphite; the filling medium is subjected to deaeration and vacuum packaging.
EFFECT: invention allows to preserve freshly cut lemons at room temperature with organoleptic properties preservation for at least six months.
