FIELD: food industry.
SUBSTANCE: sap-based chewing gum production method envisages sap melting in the microwave apparatus at a temperature of 70-80°C, microwave power being 500-700 W, during 5-7 minutes. The sap is cleared, moulded, cooled, sprayed with cedar oil, sprinkled with a mixture of fruit-and-berry powder and cedar extraction cake powder and delivered for packaging. Cedar oil is preliminarily obtained by way of microwave extraction; the fruit-and-berry powder is obtained by way of two-stage microwave treatment under vacuum under continuous drum rotation conditions.
EFFECT: product has functional properties, high organoleptic indices and biological value.
