FIELD: food industry.
SUBSTANCE: method for production of frozen fruit raw material powder envisages UHF-treatment of raw material under vacuum conditions in two stages. At the first stage the frozen raw material is subjected to defrostation at a residual pressure of 45-60 mm Hg at a temperature of 27-36°C, specific UHF power being 130-160 W/kg and barrel rotation frequency 34-40 rpm during 12-18 minutes. At the second stage the material is dried at a temperature of 36-40°C, at a residual pressure of 75-85 mm Hg, specific UHF power being 175-195 W/kg and barrel rotation frequency 50-60 rpm during 85-95 minutes. Then the raw material is milled.
EFFECT: proposed invention allows to accelerate the process of defrostation and drying of the frozen raw material, reduce power inputs and production costs with significant concentration of mineral and biologically active substances in the product.
