FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for preparation of meat mince of poultry meat; such mince is used as a base for cutlet mass goods such as cutlets, round rissoles, schnitzel, zrazy, fricandels, meat balls and rolls. The method envisages poultry meat mechanical deboning and milling by way of pressing, stirring, cooling or freezing. Milled raw materials are additionally subjected to separation; then one adds bread, flour, "Rossiysky" cheese, dry milk, mustard powder, onions, cinnamon, curcuma, starch, salt and black hot pepper. The mince components are taken at the specified quantity ratio.
EFFECT: invention ensures chicken mince organoleptic properties improvement and storage life increase.
