SUBSTANCE: invention relates to the food industry, in particular to the production of chopped meat products from poultry meat. Chopped poultry semifinished product contains chicken or turkey chopped meat, food and flavor additives, that include wheat bread, water, salt, molding of semi-finished products, panning in breadcrumbs. As food additives, xanthan gum XANTHAN GUM is additionally added in an amount of 0.15 % by weight of the raw material, the xanthan gum being introduced together with the salt while stirring the chopped ingredients.

EFFECT: provides the obtainment of a chopped semi-finished product with a high biological value, dietary and stable consumer properties, providing an increase in shelf life in a chilled and frozen condition.
