FIELD: food industry.
SUBSTANCE: method envisages beet pulp treatment with water solution of hydrogen peroxide, treated pulp pressing with solid fraction separation, drying, extraction of the dried material with water, extract separation, concentration and drying. For beet pulp treatment one takes water solution of hydrogen peroxide with concentration equal to 2.8-3.0%, the ratio of beet pulp to water solution of hydrogen peroxide being (1:3.0)÷(1:3.5). Treatment is performed during 50-60 minutes; pressing is performed till dry substances content in solid fraction is equal to 9.0-10.0%.
EFFECT: invention allows to increase the target product yield as well as increase content of water-soluble pectin substances in the food additive.
