FIELD: food industry.
SUBSTANCE: present invention relates to a structured food product with an uninterrupted fat phase. The structured edible product with an uninterrupted fat phase where the edible product contains the following ingredients, in relation to total weight of the product: a) less than 35 wt % of saturated fat acids, b) 20-100 wt % of a triglyceride composition, c) 0-80 wt % of a filler; d) less than 15 wt % of water where the triglyceride composition contains the following ingredients, in relation to the triglyceride composition mass: e) less than 50 wt % of saturated fat acids, f) less than 10 wt % of trans-isomeric unsaturated fat acids g) at least 8 wt % of POP triglycerides where P is a fat palmitic acid, O is an oleinic acid, h) SUS/SUU ratio is equal to at least 1.3 where S is a saturated fat acid with 16-18 atoms of carbon and U is an unsaturated fat acid with 18 or more atoms of carbon, i) SUS/S3 ratio is equal to at least 15 where S is a saturated fat acid with 16-18 atoms of carbon and U is an unsaturated fat acid with 18 or more atoms of carbon, j) at least 90 wt % of C8-18 fat acids, k) proportion of saturated fat acids content C16/C18 is equal to at least 1. 1) at a temperature of 20°C SFC = 3-55%.
EFFECT: invention allows to produce a structured food product with an uninterrupted fat phase with a solid structure having a suitable structure as well as a good nutritious profile.
