SUBSTANCE: invention relates to a fat composition. The vegetable-fat composition containing glycerides wherein triglycerides content is: 6% - 20% of SSS, from 5% to less than 20% of SUS, from 5% to less than 25% of SSU, from 10% to 39% of SU2 and at least 20% of U3, where S - residue of a saturated fatty acid with carbon atoms number 16 - 24, U - residue of an unsaturated fatty acid with carbon atoms number at least 18 (with all percentages given in wt % in conversion to total content of triglycerides in the composition); the weight ratio of SUS/SSU is 0.5 - 2.0; the weight ratio of (residue of a saturated fatty acid with carbon atoms number 18 - 24) to (residue of a saturated fatty acid with carbon atoms number 16) in the total triglycerides S-content is less than 0.2, the triglycerides contain at least 3 wt % of residue of arachidonic and behenic acids in conversation to total content of fatty-acid residue in the triglycerides; content of saturated fatty acids residues in the composition triglycerides is less than 45 wt % in conversation to total content of fatty-acids residues in the triglycerides.
EFFECT: invention allows to produce a fat composition having positive effects on health when used.
