FIELD: chemistry.
SUBSTANCE: invention relates to nanoparticles for encapsulation of biologically active compounds, their obtaining and application. Nanoparticle for encapsulation of biologically active compounds includes zein matrix, basic amino acid and biologically active compound. Method for obtaining nanoparticle includes preparation of water-alcohol solution, containing zein and basic amino acid, and preparation of water-alcohol solution with biologically active compound. After that, obtained water-alcohol solutions are mixed, and water is added to obtained mixed solution. In case of capsulation of fat-soluble biologically active compound, alcohol solution of fat-soluble biologically active compound is prepared and mixed with water-alcohol solution, containing zein and basic amino acid. Also claimed are: method for obtaining nanoparticle for encapsulation of water-soluble biologically active compound, nanoparticles, obtained by said methods, composition with said nanoparticle and food product.
EFFECT: invention makes it possible to encapsulate both fat-soluble and water-soluble biologically active compounds by simple method and obtain products with good stability in storage.
