FIELD: food industry.
SUBSTANCE: invention relates to production method for canned second course dinner dishes. Method for production of preserved "Primorskaya Solyanka" involves preparing recipe ingredients, cutting and sautéing in vegetable oil carrots and bulb onions, copping and freezing fresh ornamental cabbages. Method then includes cutting brined cucumbers, cucumaria meat and skin-off fish fillet. Listed ingredients are then mixed with preserved olives, wheat flour, tomato puree, acetic acid, sugar, salt, black hot pepper, allspice, cloves, cinnamon and bay leaf. Obtained mixture and drinking water are packed, sealed and sterilised.
EFFECT: method allows to get new canned foods using nonconventional vegetable raw materials without changing organoleptic properties of target product.
