FIELD: food industry.
SUBSTANCE: invention relates to method of manufacturing of canned second course dinner dishes. Method for production of preserves "Fish Solyanka" envisages preparation of recipe components, cutting skinned fish fillet, meat and cartilages milling, fresh ornamental cabbages chopping and freezing, cutting and sautéing in vegetable oil carrots and bulb onions. Then one mixes listed components with wheat flour, vegetable oil, tomato paste, sugar, salt, black hot pepper, allspice, cloves, cinnamon and Laurel leaf. Produced mixture and fish broth are packed, sealed and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetal raw materials without altering of target product organoleptic properties.
