FIELD: food industry.
SUBSTANCE: invention relates to production of products for public catering. Method for production of fried pies with fish filling envisages preparation of recipe components, blanching and chopping pike perch fillet, boiling, shelling and cutting chicken eggs, cutting and sautéing in butter, bulb onions, fresh ornamental cabbages chopping and freezing. Then, listed components mixing with salt and black hot pepper to produce filling. One performs preparation of yeast-leavened dough, handling, filling moulding into dough, proofing and baking.
EFFECT: method allows to produce new pies with usage of non-traditional vegetal raw materials without altering of target product organoleptic properties.
