Enriched bakery product is obtained by the following recipe (per 100 kg of flour): superior quality wheat flour - 95.0, superior quality wheat flour added together with concentrated sour milk starter - 5.0, concentrated sour milk starter - 12.57, pressed yeast - 3.0, edible salt - 1.5, sand sugar - 4.0, margarine - 2.5, "Seleksen" food additive - 0.002281-0.002487, vitamin premix 986 - 0.070-0.075, water - all the rest. Obtained products can be recommended for functional and protective diet. Production of enriched with microelements and vitamins main available food products for people, living in areas with a shortage of essential elements in water, soil and food, is an essential preventive measure for a number of diseases.

EFFECT: proposed bakery products ensure reduction in intensity of lipid peroxidation in the cells of human organs and tissues.
