SUBSTANCE: invention relates to food industry, in particular for confectionery industry, and can be used in production of flour confectionery products, specifically shortcake rich in biologically active components. During production of enriched cookies with addition of oat meal at first stage of dough kneading, dough kneading machine is loaded with margarine with dissolved "Selexen" food additive, granulated sugar, stirred and adding molasses, caramelised sugar, cinnamon, vanillin and stirring. At second stage of dough kneading oat flour is poured with water with temperature of 50-60 °C and salt dissolved therein and stirring. At third stage of dough kneading, method includes adding grade 1 bakery wheat flour, 0.14 kg of vitamin premix RUS28174 (manufacturer DSM Nutritional Products), remaining water and cooking soda. Dough is kneaded, moulded and baked, and baked cokie is cooled

EFFECT: invention improves food, specifically vitamin and mineral value of cookie, gives product preventive and functional properties, widens range of enriched products.
