FIELD: biotechnology.
SUBSTANCE: method of growing and breeding involves cultivating kombucha tea fungus under aeration at a temperature of 23-25°C in a weak solution of tea with dissolved sugar, exposure for 5-6 days, filtering and draining finished drink tea fungus into a jar-receiver in an amount of 450-500 ml. Kombucha beverage is covered with gauze and kept at room temperature for 30-36 hours until the surface layer of the beverage kombucha, followed by addition of a weak solution of tea and sugar and adjusting the volume to 1.5-2.0 liters.
EFFECT: invention makes it possible to reduce the time of ripening of kombucha.
