FIELD: food industry.
SUBSTANCE: device comprises the first centrifugal separator 3 for separating the milk material into cream 5 and skim milk 6, a micro-filter 11 for the isolation from the skim milk 6 of permeate 14 and retentate 15, the second centrifugal separator 18 for the separation of the retentate 15 to a pure fraction 20 and a fraction 21 with the high content of bacteria, the means for returning the pure fraction 20 to the micro-filter 11 and/or to the first centrifugal separator 3. The method provides the separation of milk material to cream and skim milk in the first centrifugal separator, microfiltration of the skim milk for the separation of the skim milk to the permeate and retentate, separation of the retentate in the second centrifugal separator into the pure fraction and the fraction with the high content of bacteria, returning the pure fraction to the micro-filter and/or to the first centrifugal separator, discharging the permeate as the skim milk from the initial milk material.
EFFECT: obtaining the product which does not impair the flavour of cheese, at that no accumulation of microbes occurs inside the centrifugal separator, the removal of bacteria with the centrifugal separator is improved, and a high power centrifugal separator is not required.
