FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary production and catering. Disclosed is a “Count ruins” cake, including one flat layer of baked semi-product containing prime grade wheat flour, sugar sand, melange, margarine, baking powder, salt, a flavouring agent, a second layer of a mixture of, taken in ratio 1:1, ground air semi-finished product containing granulated sugar, egg protein and vanilla powder, and oil filling, containing boiled condensed milk, butter, vanilla powder, cognac, layers of chocolate glaze or chocolate and roasted peanut for finishing top, finishing layer for side surfaces, including boiled condensed milk, butter, sugar powder, cocoa powder, cognac, vanilla powder, oil filling of second layer cake additionally contains NovaSol Omega food additive containing not less than 15 % of fatty acids of ω-3 and 4 % ascorbic acid, in amount of 1.6 wt%.
EFFECT: invention enables to obtain a cake enriched with functional ingredients, which preserves its functional properties during whole shelf life.
