FIELD: food industry.
SUBSTANCE: invention relates to meat industry, particularly to methods of camel meat processing. Camel meat is treated with water solution of enzyme protosubtiline GZh with proteolytic activity 70 unit/g, which is introduced into camel meat in amount of 0.4÷1.0 % by meat weight. Camel meat is then held for 6÷24 hours at 8±2 °C.
EFFECT: improvement of organoleptic and rheological characteristics of the product.
