FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology and represents an isolated polypeptide having trypsin-like endopeptidase activity. Invention also relates to a method of producing said polypeptide, involving cultivation of recombinant host cells Bacillus subtilis, containing a polynucleotide coding said polypeptide, functionally connected with one or more control sequences, which are directed products polypeptide under conditions favourable for producing polypeptide; and isolating polypeptide. Invention also relates to use of disclosed polypeptide to produce milk whey protein hydrolysate.
EFFECT: invention allows effective use of trypsin-like endopeptidase for hydrolysis of whey protein.
