SUBSTANCE: invention relates to biochemistry. Disclosed is the use of a variant of subtilisin 309 for removing stains from eggs, wherein said variant has an 80 % identity as compared to the amino acid sequence of the original subtilisin and includes substitutions S9R, A15T, V68A, N218D, Q245R, wherein said variant further comprises at least one of the following modifications: G61E, N62D, N76D, *97aG, A98S, S99G, S101G, H120{V,Q}, P131S, Q137H, A194P, A228V, A230V, N261D.
EFFECT: invention enables to remove said type of contaminants more efficiently.
