SUBSTANCE: invention relates to field of probiotic microorganisms, particularly to compositions containing probiotic microorganisms are converted in non-replicating condition by extrusion. Also disclosed is method for production of food composition. Method envisages provision of probiotic microorganisms either as dry raw mix, or as part of wet mixture, which is added to dry mixture at stage of extrusion, combined extruding of raw material and probiotic microorganisms, which probiotic microorganisms in non-replicating condition and removal of extruded product containing non-replicating probiotic microorganisms.
EFFECT: invention enables to obtain composition containing non-replicating probiotic microorganisms having improved anti-inflammatory and immunogenic properties.
