FIELD: food industry.
SUBSTANCE: invention relates to food industry. Chewing gum contains at least 15 wt% of powder of dried fruit and chewing gum base in an amount of at least 25 % of chewing gum composition weight. Powder of dried fruit contains fruit in concentration of at least 85 % by weight. Also disclosed is a method for reduction of bulking sweeteners, selected from a group consisting of sugars, polyols and their combinations in chewing gum. Method comprises introduction of at least 15 % of powder of dried fruit in terms of chewing gum composition weight. Powder of dried fruit contains fruit in concentration of at least 85 % by weight.
EFFECT: invention allows to produce chewing gum with improved chewing properties, intense aroma and sweet taste with simultaneous replacement of sweetener powder of dried fruit.
