FIELD: food industry.
SUBSTANCE: invention is intended for usage in dairy industry in production of dairy products, for example, in form of puddings, milk jelly, dairy desserts, etc. Product contains partly hydrolysed milk protein, partially hydrolysed soya protein, whey protein concentrate, concentrate of soya protein, acid casein. Also product includes specially prepared protein component, containing fine spherical protein particles of average diameter of 0.1-3.0 mcm, and bee pollen pellet. During production thereof in ultrafiltration bee pollen is introduced to whey concentrate, homogenised, simultaneously heating and strong mechanical shear effect are applied. Enriching additives are also introduced. All components are combined by moisture-containing filler.
EFFECT: invention allows to produce milk-protein product with low caloric content, high organoleptic properties with increased nutritive and biological value and improved digestibility.
