FIELD: food industry.
SUBSTANCE: invention relates to production method for canned concentrates of first courses. Method comprises preparation of recipe ingredients. Prepared beef is minced and fried in melted butter. Onions, garlic, aubergines, tomatoes, and paprika are cut and sautéed in melted butter. Potatoes and radish are cut and blanched. Carrots are blanched and cut. Fresh ornamental cabbages are cut and frozen. Greens is chopped. Listed components are mixed with one part of salt, black hot pepper, coriander, cumin, and laurel leaf. Wheat flour, chicken eggs, drinking water and remaining salt are mixed to produce dough, which is proofed, rolled, cut and blanched to obtain noodles. Noodles, obtained mixture and bone broth are packed, sealed and sterilised.
EFFECT: method allows to get new type of canned food using nonconventional vegetable raw materials.
