FIELD: alcohol production.
SUBSTANCE: process comprises breakage of grain, kneading it with water, water-heat processing of kneaded material at 45-55°C for 10 to 90 min, saccharification, and fermentation with proteolytic enzyme preparation (BNZ 720) added to wort after saccharification in amount 2-4 standard units per 1 g protein. Resultant wort is centrifuged to separated into solid and liquid phases. Solid phase is washed with water with water duty 1:5 at 50-55°C and then subjected to separation yielding protein. Wash waters are further used in kneading stage.
EFFECT: enhanced processing of grain feed to give additional kinds of produce, increased yield of alcohol with improved quality characteristics, and reduced cost of alcohol.
